BASIC WINE JELLY
(makes
about 30 oz.jelly)
2 cups Burgundy or other red dinner wine.
3 cups sugar
3 oz. liquid pectin
Combine wine and sugar in top of double boiler and place over rapidly boiling
water for about 3 minutes, stirring constantly until suger is dissolved. Remove
from burner and stir in pectin. Immediately pour into glasses, and pour on the
parafin seal.. For variety, a white dinner wine of Rose' may be used instead
of Burgundy.

MINTED WINE JELLY
makes
about 30 oz.)
Green food coloring
2 cups Muscatel
3 cups suger
3 oz. liquid pectin
15 drops mint extract
Tint wine to desired shade, stir in sugar and place in top of a double boiler
over boiling water. Sir to dissolve sugar (about 2-3 minutes). Remove from stove
and add pectin and mint extract. Pur immediately into sterile glasses and seal
with pectin.

ORANGE PORT JELLY
(makes 30 oz.)
3 cups sugar
1/2 cup water
1 cup white port
6 oz can concentrated orange juice with pulp
2 tbsp lemon juice
3 oz. liquid pectin
Bring sugar and water to a full boil in top of double boiler.
Boil hard about one minute stirring constantly. Remove from
heat and add wine and fuit juices. Then add the pectin stirring well. Pour into
sterilized glasses and seal with hot parafin..

HOT WINE JELLY
(makes about 32 oz.)
1 Tbsp. dried hot peppers, crushed
2 cups sweet red wine
3 C. sugar
1 1/2 tsp. orange food color
3 oz. liquid pectin
Soak peppers in wine 5-6 hours.
Strain wine and pour into medium saucepan, adding the sugar and food coloring.
Heat over low heat about 5 minutes until sugar is dissolved. Remove from heat
and add the pectin removing any foam that forms over the top. Pour into hot sterilized
jars, seal with hot parafin. |
MADEIRA WINE JELLY DESSERT
(serves 6-8)
2 envelopes of gelatin
1 cup sugar
1/2 cup cold wtaer
1/3 cup freshly squeezed orange juice
3 Tbsp freshly squeezed lemon juice
1 cup madeira wine.
Mix the gelatin and sugar together in a small bowl, stir in the cold water, and
let soften for 5 minutes., then place over boiing water and mix well to dissolve.
Add the orange juice, lemon juice, and wine. Pour into dessert dishes or a bowl
and chill until firm. |
